We were invited to the grand opening of King Chef Fine Dining located at 989 Banawe St., Q. C.

King Chef Fine Dining was bourne out of the need for a bigger space for bigger groups of guests for special occasions. So husband and wife team, Michael Chan-Ang and Marites Apiado-Ang as luck would have it, leased the building next to King Chef Dimsum Kitchen (opened June 29, 2009) and Cantonese Soup Kitchen (opened July 2009).

Rainy June, decided to chill at SM North, The Block instead of braving the traffic. Looking for Filipino food (translation: rice meals) that fits the rainy mood..comfort food as they say. Rode the escalator to the third floor, looked to the right and saw Recipes with quaint interiors plus inviting soft chairs.

As a habit, asked for their house specialty and best sellers and it was quite a surprise that everything on the menu is preferred by different people of different age groups.

They say a picture is worth a thousand words,true because the descriptions here try with all might, cannot compare to the experience.

Down time on a hot afternoon, right smack in the middle of Pasong Tamo Extension with foodie-friends Leira Pagaspas and JayL Aquino, we decided to go on a foodie hunt. Tired of the usual, generic meals we searched online for hole-on-the-wall, must-try foodie havens.

Just our luck Bistro Better was nearby plus the, “It’s not your usual restaurant fare, says Bistro Better owner Carmencita Abadicio. "Because it’s homemade so you’re sure it’s not being mass produced and the sauces are made from scratch.” Better Bistro.

Straight from the kitchen of the late Conchita Penalosa-Kabigting, and handed down to her daughter, Carmencita Kabigting-Abadicio indeed, it is homecooked, comfort food that we have experienced!

Sakae Sushi and UCC VIenna Cafe: Take out cravings

What's the next best thing when you're busy, its late and you're craving for good food? Well take out of course!

We were craving for a bit of Japanese and then some sweet endings. So we decided to purchase from different food chains.

As luck would have it there's a Sakae Sushi and UCC Vienna Cafe nearby (we were at SM Annex canvassing for Nokia Ovi phones). Which by the way are sister companies so to speak. We realized that when the UCC Viena Cafe attendant smiled at the Sakae Sushi take outs hehe!

Tempura as always is fave at Sakae Sushi. If it were not that late we could have done the sushi rounds but the mall's closing. We definitely recomend you try it out too especially with the family. The kids will have a thrill at the sushi conveyor plus you can see how they make the sushi through the clear glass partition. An educational and culinary experience for everyone as well!

UCC Vienna Cafe cakes are definite must-try/must-have after a good meal. By now I think we've tried almost every cake they have (calories galore but not ashamed!) What you see above are: Oreo, "BTS" and Macadamia Cheesecake.

Oreo - Who doesn't like anything with Oreos? This cake is not that sweet and the Oreos are complimented with soft-base chiffon and cream. Perfect with coffee or tea too!

"BTS' (better than sex) - Uhmn, who doesn't like caramel, chocolate and that special surprise in the middle. Ok, that may sound wrong but trust that its about the cake hehe!

Macadamia Cheesecake - Nutty and fluffy goodness best paired with coffee indeed!

Can't remember exactly when we started collecting Coca-Cola trinkets but we have shelves of "coke happiness" near the kitchen (minus the ones lost while transferring to our new home) and we always have 1.5 liters stocks of Coke.

Ate Fely (cousin) is the top Coca-Cola fanatic among us so long story short, after grocery shopping we just have to try it out even if just for a few bites since it was way over lunch and we have to get back home.

- their version is sweet, cheesy and has just the right amount of ground meat and meatballs; kids will definitely like this

A few days ago with foodie friends Leira and Ann, we tried Dulcinea's Canonigo and of course our family favorite, Churros con Chocolate.

Dulcinea's Canonigo is (in this foodie's opinion and sugar meter) is good enough for 3-4 persons. True to its Spanish recipe, Dulcinea's version is a delightfully fluffy souffle or meringue (light baked cake made with egg yokes and beaten egg whites) with a generous douse of rich custard sauce.

Dulcinea's Churros con Chocolate is famous because its freshly made, served hot and crisp, non-oily and for its consistent taste. The chocolate dip is reminiscent of childhood home made drink tablea (blocks of cocoa powder purely made from cacao beans) but much thicker and sweeter.

Aunt Sally's well-stocked bar; certain wines stored behind/below the wooden implement and in the dark to keep its quality

Be it Bacardi, Smirnoff, Jack Daniels, Grey Goose, Patron, Tawny Port, Courvoisier, Hennesy, Tequila, Baileys, etc. just name it and the experience-trained mixologist in us will whip it up for you! Either neat, straight up, on the rocks, with club soda, tonic water, juice, cola..or if you prefer, a simple cocktail or shooter instead. Beer, shakers and NAB (non-alcoholic beverages) in the fridge..but that's not fun (agree?).

Back then our dads and uncles especially after dinner, would congregate either on the porch or sala for a few smokes and a nightcap. The seniors usually go for cognac or brandy..long story short, together with a batch of cousins (around 7-ish) had the first taste of an alcoholic drink as per family tradition. "But don't think we're alcoholics!"

As they say, better that you take the first sip from them and see if you like the effect or not (if you'll be traumatized not to drink ever again or if its apparent you'll be needing some guidance someday hehe!). True enough, because of that tradition, we do mind our intake when in public and get silly drunk when we're safe at home instead.

Not an expert just the experience at parties held almost every week since salad days and a short class on Wine 101 so there's more room to learn. Plus, still prefer to use certain spirits with cooking (beef and seafood). Still trying to "build" at least half of that well-stocked bar up there, in case there's need to entertain impromptu and well, it's tradition!

Our family habitually holds parties (almost every week) and the daily menu, the usual epic cooking challenge. Here are some of the kitchen implements (buddies) we have on hand.

Water Heater - pointed this one out at the store because of its many uses. We mainly use this for parties because guests often ask for coffee or tea (the coffee and tea concoctions deserves and will be on a separate post). We also bring it during road trips not just for coffee or tea but for cooking and the security of having safe and boiled water for the whole family.

Sturdy Coffeemaker - Aunt Sally acquired this at David Jones ; it makes use of disposable filters and makes around 4-6 cups of freshly brewed coffee

Electric Wine Cooler - Aunt Sally also acquired this at David Jones; Its an efficient upgrade from the usual ice bucket because wine/liquor stays chilled longer even though amidst melted ice.

Recently had the time to grab a wee but reliable coffeemaker (finally!) - it has a built-in filter, easy to wash/rinse plus it brews coffee (6-8 cups) in no time!

Drip coffee for breakfast or for a quick wake-me-up for the home and office/clinic just a few steps away. With choice coffee beans given by family and friends all waiting in the pantry, freshly grounded (almost everyday if time permits) and enjoyed at last!

Chefs on Parade (COP): Bigger, Grander, Tastier!

The Hotel and Restaurant Association of the Philippines (HRAP) brings back Chefs on Parade (COP), the Philippines’ longest running culinary competition, on February 10, 11 and 12 at the SMX Convention Center. COP’s return has gotten the Filipino food industry celebrating. Restaurants and hotels are already choosing who among their chefs will be fielded. HRM colleges and culinary schools are signing up to join; their students busy with research and training for D-day. Foodies have hailed COP’s comeback as the answer to the community’s craving for a sumptuous gastronomic experience.

“Chefs on Parade is a prestigious event,” affirms Christopher Park, General Manager of the Manila Pavilion Hotel and Vice-Chair of the COP Competitions and Judging Committee. “It is recognized as the first national culinary competition in the Philippines and the only culinary event organized by the official association of the industry, the HRAP.”
Mother of all culinary events
The COP began in 1974 as a simple food display. Held for only a day at the Sea Breeze Hotel in Bacolod, it attracted a modest audience. But thanks to the efforts of organizers, most especially the chairpersons, COP grew in scope and support. “It is considered to be the mother of all culinary events in the country,” says HRAP Board Director JM Tanalgo who is also the head of the COP 2011 Ways and Means Committee.

Tanalgo further states that the COP is an HRAP creation. “The term ‘Chefs on Parade’ was made popular by HRAP and the association even owns the trademark and registration of COP.”

As the event became more popular, it attracted more participants and bigger crowds. From hotels, the COP was housed in big venues like the Philippine International Convention Center (PICC), World Trade Center and the Intramuros Clamshell Pavilion.

The competition was held yearly from 1979 to 1998. It was then held every two years from 2000 to 2004. It stopped after 2004 due to financial constraints and the country’s challenging economic situation.
Back by popular demand
That is, until the intercession of the current HRAP who noted that new developments called for the COP’s return.

Richard Masselin, COP 2011 Over-all Chairman, explains: “Food has taken center stage in the lifestyle of a large and growing consumer base. Restaurants and food concepts are flourishing like never before and finally, on the human resources front, the country has thousands of young individuals undertaking college degrees, courses in culinary and or Hotel and Restaurant Management. … With established and new talents eager to showcase, compete and certainly celebrate, the COP will be a great platform for all of us to share our passion amongst professionals and also with our Public.”

He sums up the decision to mount the COP again as a “moral consideration.” Masselin says, “It was a response to requests from the community and the supporters of the HRAP as the industry and partners were urging us to revive the COP.”

The greatest cooking show
However, the current group of organizers realized that if they were going to do so, the event cannot simply be a revival; the COP would have to be on a grander scale and at par with global standards. Masselin says, “We set one condition… make it the greatest culinary event in the country!”

To this end, the HRAP prioritized raising the necessary funds. “The financial aspect of the operation was rationalized early… We have decided to form several partnerships to meet our financial requirements. As of to-date, we are well on our target,” says Masselin. “COP requires a massive amount of work and organization as well as for the logistic. We have a dedicated team on board with a lot of things to do until February 2011 but we are moving forward.”

Asian-wide
Based on the venue and the line-up of activities, alone, Chefs on Parade 2011 is set to be the biggest in its history. Halls 1, 2, 3 and 4 of the SMX Convention Center will be utilized for three full days. “So that is about 9,000 ++ square meters of culinary experience,” says Tanalgo.

More than food
Aside from the culinary contests, there will also be several free cooking demonstrations form known chefs, a book launch and several free workshops from industry experts. Two of the biggest highlights will be the presentation of the Larry J. Cruz Culinary Award to an individual who has made a great contribution to the food industry, and an ASEAN & Filipino Culinary Journey featuring historical cuisine and savory dishes from the Southeast Asian countries.
All these will be open to the public. The HRAP assures that the entrance fee and the tickets will be at popular prices.

Wendy’s Greenbelt reopens with a new look

Jason John W.S. Lim, newly appointed president of Wenphil Corp. (the Philippine franchisee of Wendy’s International), said Wendy’s International has seen the wisdom of creating a more "modern and clean feel" to their stores as a way of attracting a more diverse clientele, specifically from among the younger market aged 16 and up. The company decided to renovate its stores starting this year and to date, he said the company has spent P200 million to renovate 18 of its current 30 stores. Mr. Lim said Wendy’s has allotted another P150 million for the face-lift of the remaining 12 stores next year.

Wendy’s Greenbelt was the fourth Wendy’s branch in the country. It opened in October 1986. It was first renovated in April 1991, and then in June 2004. The store was renovated earlier this year, and was closed for 45 days until its soft reopening last month.

As Wendy’s improves on the look of all its stores, Mr. Lim said the company is also gearing up to aggressively expand next year. He said Wendy’s plans to open at least 15 new stores, mostly in the provinces like Cebu and Davao. "We feel it’s the best time for Wendy’s to change and keep up with the competition," Mr. Lim said.

WENDY's New Baconator Mexican Melt

Recently, Wendy’s introduced its biggest burger to date -- the Baconator Mexican Melt. It boasts of two 100% beef patties weighing a quarter of a pound each, combined with six strips of smoked bacon, and one generous slice of American cheese before it gets topped with cheese sauce, and sliced Jalapeño peppers. It is served on warm kaiser buns.

For the more health conscious, Wendy’s will soon offer shrimp fritters to complement the restaurant’s very popular shrimp sandwich, and its wide variety of salads.

"Now you know why.." was what fellow food blogger Leira's said when we finally trooped to Sabroso Lechon located at E. Rodriguez Ave., Corner Tomas Morato, Quezon City.

We reside in Quezon City and frequent passing E. Rodriguez and have noticed Sabroso but we thought they just sell lechon by order, whole, by the kilo, etc. Lo and behold they also serve it dine in with rice and soup!

Greenwich celebrated International Friendship Day (celebrated every first day of August) by introducing the Greenwich Bigatin Friends and launching 2 new Overloaded Bigatin Pizzas—the Hungarian Sausage & Bacon Overload and Shrimp & Garlic Overload.

Pistachio Kulfi P125 - a flavored frozen dessert made from milk which originated in India similar to ice cream in taste, texture and preparation; takes longer to melt than ice cream; a fitting dessert to after a spicy meal with its creamy consistency and nutty pistachio bits - heaven!

Their interior is very sleek and modern but with touches of Indian culture particularly with their interesting wall decors. I fancy the subtle details of their napkin holders, sugar and cream container and water glass tray (3rd and 4th photos above) all silver and with intricate designs. A table for four or eight are available ergonomically spaced and very comfortable. The ambience is laid back, enjoying good food while watching the latest Indian music videos on their telly. They are available for private functions it and can fit approximately 30-50 people easily. Oh and as stated above they are Halal-certified and vegetarian friendly.

Glossary of Terms:

*Sweet lassi - a form of lassi flavored with sugar, rosewater and/or lemon, strawberry or other fruit juices

*Kebab - the traditional meat for kebab is lamb, but depending on local tastes and taboos, it may now be beef, goat, chicken, pork; fish and seafood; or even vegetarian foods like tofu; served on the skewer or döner kebab served wrapped in bread with a salad and a dressing

*Tikka - a piece of meat, such as a cutlet, and the popular dish chicken tikka is made of chicken cutlets in a marinade; made from a mixture of aromatic spices and dahi (the Indian word for plain yoghurt)

*Pullow - (Basmati- a variety of long grain rice grown in India and Pakistan, notable for its fragrance and delicate, nuanced flavor); rice cooked with spices and onions

*Reshmi - a traditional Muglai dish prepared in India. It gets its name from the succulence of the meat after prolonged marinating and light braising

*Machi Masala - fish curry cooked in various spices

*Masala - can either be a combination of dried (and usually dry roasted) spices, or a paste (such as vindaloo masala) made from a mixture of spices and other ingredients—often garlic, ginger, and onions. It is used extensively in Indian cooking to add spice and flavor
